Pancake Day

Pancake day is probably one of my favourite days, who doesn’t love an excuse to eat a pancake smothered in sugary goodness. Everyone seems to have their own favourite topping, my older brother always had nutella on his pancakes, my younger brother likes a lemon and sugar and my favourite is maple syrup.

Growing up every year I would go to my grandparents for pancake day, my grandma makes the best pancakes, my brothers and cousins would definitely agree! This year I am having to fend for myself and make my own pancakes, in theory I should be fine, I’ve watched my grandma do it for nearly 20 years.

I thought that I would share this pancake recipe for anyone else who is having to fend for themselves this year…

Ingredients:

120g plain white flour

2 eggs

250ml milk

2 tablespoons of melted butter

Toppings… get creative, I’m feeling a bit of nutella and strawberries today.

Method: Sift the flour into a large bowl, then crack the 2 eggs and add a quarter of the milk into the bowl with the flour and whisk together, slowly add the rest of the milk while whisking it all together. Finally add 1 tablespoon of melted butter and whisk again. You can use the remaining tablespoon for cooking.
