Chicken with Halloumi and Honey

Sitting at my desk one lunchtime, eating my mundane ham and mustard sandwich thin and dreaming about what to make for a more inspirational dinner, I decided to google ‘chicken and halloumi recipe’. Now, it’s not everyday that I have chicken and halloumi sitting aimlessly in the fridge but on this occasion, I did. These are two of my favourite ingredients, not usually combined, but this delightful, little Donna Hay recipe popped up and it comes highly recommended. The flavours of tender chicken, sweet honey and salty halloumi with hints of lemon worked perfectly together, served with a rather posh side salad of peppery rocket and sweet fig flavours made for a delicious midweek treat!

INGREDIENTS

2 x 200g chicken breast fillets, trimmed

150g halloumi cheese, cut into 4 slices

1 tbsp lemon zest, grated

6 sprigs lemon thyme

1 tbsp honey

1 tbsp olive oil

fig and rocket salad, to serve

METHOD

  1. Preheat oven to 180C/160C fan/gas 4. Place the chicken, halloumi, zest and lemon thyme in a ceramic baking dish. Combine the oil and honey and pour over. Bake for 30-40 minutes or until chicken is cooked through.
  2. Serve with a fig and rocket salad.
